Chicken Orzo Protein Bake

Serves: 4 Prep time: 10 minutes Cook time: 40-45 minutes What you’ll need: A glass oven dish, approximately

Ingredients:

  • Orzo pasta
  • fresh baby spinach
  • cherry tomatoes
  • cooked chicken (shredded or diced – a rotisserie chicken works wonders here!)
  • Parmesan cheese, grated
  • Boursin cheese (or any herbed cream cheese you love!)
  • chicken or vegetable stock
  • Salt & freshly ground black pepper to taste

Let’s Get Cooking!

  1. Preheat your oven to (that’s about ).
  2. Grab your oven dish. Pop the Boursin cheese right in the middle.
  3. Now, add everything else – the orzo, spinach, cherry tomatoes, cooked chicken, and stock – into the dish. Give it all a good mix around the Boursin. Don’t add the Parmesan yet!
  4. Cover your dish tightly with foil. Bake in the preheated oven for about minutes.
  5. Carefully remove the foil, sprinkle over the Parmesan cheese, and pop it back into the oven for another minutes, or until the cheese is golden and bubbly and the orzo is tender.
  6. Divide into equal portions and enjoy!

My Tip: This is brilliant for batch cooking! Let any extra portions cool completely, then store them in airtight containers in the fridge for delicious, ready-to-go meals throughout your week.
