Serves: 4 Prep time: 10 minutes Cook time: 40-45 minutes What you’ll need: A glass oven dish, approximately 35cm×25cm
Ingredients:
- 200g Orzo pasta
- 200g fresh baby spinach
- 500g cherry tomatoes
- 320g cooked chicken (shredded or diced – a rotisserie chicken works wonders here!)
- 50g Parmesan cheese, grated
- 150g Boursin cheese (or any herbed cream cheese you love!)
- 400ml chicken or vegetable stock
- Salt & freshly ground black pepper to taste
Let’s Get Cooking!
- Preheat your oven to 180∘C (that’s about 350∘F).
- Grab your oven dish. Pop the Boursin cheese right in the middle.
- Now, add everything else – the orzo, spinach, cherry tomatoes, cooked chicken, and stock – into the dish. Give it all a good mix around the Boursin. Don’t add the Parmesan yet!
- Cover your dish tightly with foil. Bake in the preheated oven for about 35 minutes.
- Carefully remove the foil, sprinkle over the Parmesan cheese, and pop it back into the oven for another 5−10 minutes, or until the cheese is golden and bubbly and the orzo is tender.
- Divide into 4 equal portions and enjoy!
My Tip: This is brilliant for batch cooking! Let any extra portions cool completely, then store them in airtight containers in the fridge for delicious, ready-to-go meals throughout your week.
